Spanish Chicken & Chorizo Pot!

I love when you forget about a dish you used to make and all of a sudden you are in the supermarket and something reminds you of it. Chorizo was what triggered my memory of this Spanish Chicken and Chroizo pot I have made in the past. Seeing as I was in Spain for the weekend it was also a fitting post.

This dish is one of my favourites and has some of my faovuirte ingredients, yes you guessed it loads of garlic!

Ingredients

Chorizo sausage
Garlic bulbs x 3

Fresh tomatoes
Can of tomatoes
Baby potatoes
Shallots
6 x Chicken Breasts





Get a nice oven proof dish, one you are happy to serve at the table. Cut the chorizo and put it into the dish with the chicken, tomatoes, garlic and season generously. Par boil the potatoes while the chicken is in the oven at 180 degrees. Once they're soft cut them in half and throw them into the dish and mix them around so they are fully coated in all the juices.


Once cooked serve up! 





What I love about this dish is that there is little clean up to be done and is perfect if you are having a group of friends over.
